The Rivesaltes mill!
The history of the Rivesaltes mills is linked to the origins of the watering canal, whose creation is due to a concession from King Sanç of Majorca (charter dated November 6, 1312), which had enabled the operation of a first mill known as "Mouli Veil" in the rue du moulin.
A notarized deed dated October 3, 1788, for the lease of the Rivesaltes mills by owner Joseph OMS-Tord, a descendant of one of Roussillon's oldest and most illustrious families.
In this mill, 2 vaulted underground passageways communicated via a vaulted room forming the basin.
In this room, water flowed in and out from a certain height, turning a waterwheel that powered the millstones used to crush the olives.
